Creamy Goat Cheese and Figs Make This Simple Pasta Dish Divine

Pasta doesn’t have to be as lackluster as spaghetti with marinara sauce. Here, the combination of luscious goat cheese, sweet figs, and fresh herbs elevates simply dressed gluten-free noodles.

Fig and Goat Cheese Pasta

Yield: 4 servings
Active Time: 10 minutes
Total Time: 25 minutes

1 package quinoa pasta
1/4 cup olive oil
Maldon salt
5 fresh figs, quartered
4 tablespoons mixed herbs (tarragon, parsley, chives, etc.), chopped
1/4 cup walnuts, chopped
1/4 cup goat cheese

Cook quinoa pasta according to package instructions. When cooked and drained from cooking water, mix with olive oil and salt. Mix in figs, herbs, walnuts and goat cheese to serve.
