You could just open a bottle of wine and call it a day, or you could turn your favorite summer wine into an unforgettable dessert. It’s easy! We start with a boozy frosé, then top it with a goji berry–infused simple syrup. This is one adults-only snow cone you’ll want to make all season long.

For the goji simple syrup
1 cup water
¾ cup honey
½ cup goji berries, plus extra for garnish
For the frosé
1 pint raspberries
5 tablespoons goji simple syrup
1 tablespoon lemon juice
1 bottle rosé wine
Mint, for garnish
Make the goji berry simple syrup
In a small saucepan, add water, honey, and goji berries. Bring to a boil, then reduce to simmer, stirring until honey has fully dissolved (about 5 to 7 minutes). Turn off heat and let cool. When cooled, purée in a high-speed blender until smooth. Press through a fine mesh strainer, then refrigerate until ready to use.
Make the frosé
In a high-speed blender, add raspberries, 5 tablespoons goji simple syrup, and lemon juice; blend until smooth. Press through a fine mesh strainer, then pour into a 9” x 13” pan. Add rosé and stir until combined. Cover for freeze for 2 hours. Remove from freezer, stir with a fork, breaking up any chunks. Return to freezer for an additional 3 to 4 hours.
To serve, remove frosé from freezer. Scrape with a fork to create a snow-like texture. Pack frosé into two glasses, then drizzle with goji berry syrup. Garnish with mint and serve immediately.
