For the mix
1 cup organic, unbleached sugar
½ cup cocoa powder
1 teaspoon instant coffee
½ cup all-purpose or gluten-free all-purpose flour
¼ teaspoon baking powder
½ teaspoon sea salt
½ cup dark chocolate chips
½ cup crushed candy canes
1-liter capacity glass jar
For baking
2 large eggs
½ cup melted butter, cooled
1 teaspoon vanilla extract
Make the brownie mix
To assemble the mix, layer all the ingredients in a glass jar, cover tightly with a lid, and set aside for later.
Make the brownies
Preheat oven to 350 degrees and line an 8×8-inch pan with parchment paper.
Whisk eggs, butter, and vanilla extract together in a large bowl. Dump in the contents of the brownie mix and whisk until well combined. Scrape batter into pan and bake for 25 to 35 minutes, or until just set. Let cool, then cut into squares.
