Just because you’re eating keto doesn’t mean your sweet tooth completely disappears. Brownie bombs to the rescue! These chocolatey morsels melt in your mouth and give you an added dose of collagen peptides. They’ll probably go fast, but you can keep ’em in the fridge for a week.
Yield: 15 brownie bombs
Active Time: 15 minutes
Total Time: 25 minutes
4 ounces cream cheese, softened
¼ cup Thrive Market Non-GMO Almond Butter, Creamy
¼ cup Thrive Market Regeneratively Grown Organic Cacao Powder, plus more for dusting
2 scoops Thrive Market Grass-Fed Collagen Peptides, Chocolate
3 to 4 tablespoons Thrive Market Switch Sweetener
2 tablespoons Thrive Market Organic Virgin Coconut Oil, melted
â…“ cup stevia-sweetened mini chocolate chips
Add all ingredients except chocolate chips to a food processor and blend until smooth. Add chocolate chips and pulse a few times to mix. Scoop mixture into 1 tablespoon portions and place on a parchment-lined sheet tray; freeze 10 minutes. Gently roll balls in the palm of your hand until round. Return to freezer for 10 minutes more. Dust with cacao powder before serving. Refrigerate leftovers in an airtight container for up to 1 week.
