Sometimes you need a little morning snack or afternoon pick-me-up to get you through until your next meal. These chocolate bites will do the trick, combining vanilla protein powder, dates for sweetness, and creamy peanut butter. Make them on Sunday to enjoy throughout the week or stick in kids’ lunches for a wholesome (and vegan!) post-lunch treat.

3 scoops Vega Protein & Greens, Vanilla
3 Medjool dates, pitted and chopped
¾ cup almond flour
½ cup peanut butter
⅛ teaspoon salt
¼ cup mini vegan chocolate chips
Add all ingredients except chocolate chips to a food processor and blend until smooth. Add the chocolate chips and pulse a few more times, until just incorporated with small pieces remaining. Scoop a heaping tablespoon into the palm of your hands and roll into a ball; set on a parchment-lined sheet tray. Repeat with the rest of the mixture and refrigerate balls until hardened, about 20 minutes. Keep refrigerated in an airtight container for up to 1 week.
