Making authentic pizza at home can take some time and effort—working with a yeasted dough requires at least one rise and a lot of kneading. Luckily, we found a shortcut that takes just half an hour from start to finish. Combining Greek-style yogurt with baking soda, flour, and salt helps the dough rise without the need for yeast. The crust stays chewy on the inside, but turns crispy on the outside (don’t worry, it tastes nothing like yogurt).
Go classic and top it off with a simple tomato-basil sauce and fresh mozzarella, or experiment. We went with pesto, arugula, sliced avocado, and mozzarella.
Yield: 1 large or 2 small pizzas

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 cup full-fat plain Greek-style yogurt
Preheat oven to 450 degrees.
Mix all the ingredients together in a large bowl until combined, then turn the dough out onto a lightly floured work surface and knead for 8 to 10 minutes. If dough feels too sticky, add a little more flour. Roll out about 1/2-inch thick into desired shape, brush with olive oil, and top with desired toppings. Bake 10 to 12 minutes in oven.
